Bubby's owner, Ron Silver, was using the kitchen at 120 Hudson Street to bake pies for his wholesale pie company. His landlord gave him permission to open to the public for one day. He set up a few tables and chairs, brewed some coffee, and sold a few hundred pies. Bubby's has been serving up delicious home cooking ever since.
